Stuffed baked potato, mmmmmmm. The cheese and sour cream just counters the healthy content of the skin.

Sometimes steal the skin from my wife's plate or put it in the go box.

If you coat the outside of the potato with garlic juice prior to baking, the skin will come out the same as it went in not leathery. Don't know why but my wife's father taught me this over 40+ years ago and you will never taste the garlic. Makes for good eating. Oh, slice potato open and put half slice of bacon in it with lemon pepper and full slice wrapped around it closed and it's even better.

Give Greek yogurt a try instead of the cream cheese. I like it better.

You're kidding, right? I mean, why cook it if you don't eat the skin?

That's how I rationalize it to myself.

I like to wrap the taters in aluminum foil and cook right on the coals when I am BBQing. Cook them until the skin turns black, love them that way.
