Ouray Colorado. Little Swiss of America. Absolutely beautiful out there. Buddies and I took a motorcycle trip out there back in 2014 and the views on and off road were freaking nice!

This actually happened to me 35 years ago after I won a contest with a new local travel agency. Old guys remember travel agencies. Anyhow, my wife and I flew to Tucson, Arizona in the middle of the winter.

I have been to many of the places mentioned and Alaska is at the top of the list easily if you enjoy wildlife and fishing and beautiful scenery. It is also the hardest to plan but well worth the effort.

Oops... I missed the May timeframe... Might be a bit early for above.
Another possibility... The Texas Hill Country.
Might be at the tail end of peak bluebonnet viewing, but if it's early May, the wildflowers should still be pretty spectacular there. Make your home base around the Kerrville/Mountain Home area, rent a motorcycle (or car) and just hit the roads... Tons of wildlife and some really cool routes, vistas and views within ~50-75 mile radius (mostly west and/or south) of there... If some city stuff is desirable, San Antonio is about an hour down I-10.
Lots of stuff to see/do.

Assuming you are wanting to relax and go sightseeing as opposed to a fishing trip I have to vote for heading west. I live in Maine, I've seen a lot of it and we have some nice areas but just having toured the west, it doesn't really compare. Everything out there is on a much bigger scale. Grand Teton/Yellowstone, Glacier, Yosemite, Zion/Bryce would be my top choices. Many places like Custer State Park or the Sawtooths, for example, are also worth a visit but I don't know as I'd dedicate a full week to them.
Feel free to contact me with any questions and I'll do my best to answer. First decision is what do you want to do during that week? Hike, bike, fish, photograph, shop, eat, etc.?
I have a goal to visit all 50 states, currently sitting at 32 with the whole north east from NY/VA/NJ/etc... on my list still. So I would probably go somewhere up there where I could rent a car and drive/visit all those states to knock the 10 I need up there off my list. Plan for a fall trip so I could see the colors.
Texas in the winter and maybe Upper Peninsula during summer. Go fishing at both places!
