    BBC Heads Will Explode..... Except for TJ

    In an effort to eat healthy, the wife cooks 1 meal a week without meat. Her latest creation was Cauliflower Tacos. They were very good. Added black beans, cheese, lettuce and a bit of sour cream. Corn Shells. Bash away, but they were damn good.

    Looks good to me. There was a recipe for jackfruit 'pulled pork' sandwiches a while back. Made that a few times.

    Nothing wrong with that. Ill occasionally buy those round flat hard shell tortillas. A layer of refried beans, salsa, cheese, black beans, lettuce etc. Like a refried pizza from taco bell.

    Cauliflower coated with olive oil, sprinkled with BBQ rub (salt free) then grilled or broiled is great.

    Had some buffalo cauliflower buffalo bites in Portland a while back and they were really good. You can do a lot with cauliflower. We mash them and use them instead of potatoes and you can barely tell the difference.

    Looks good. I’ll have to try those. Love cauliflower.
    We do black bean quesadillas once a week or so with no meat.
    Finely chop up onion, red and green bell pepper, tomato (if you like it), and add 1/2 cup of drained canned corn. Cook in EVOO over medium heat until onions are translucent, peppers are soft, and corn is slightly browned. Drain and heat canned black beans then add to mixture and combine. We use flour tortillas. Coat one side with butter, place in the skillet, top with Monterrey Jack cheese, add the mixture, top with a little more cheese, and top with another tortilla. Cook until brown flipping once. I like to add Mesquite Grilled chicken to mine, but it’s not necessary.

    And try BBQ jackfruit as a meat substitute as well.
    We are fortunate enough to buy it fresh, but they sell packaged.
    Trader Joe’s, Fresh Market and others keep it in stock.
