Definitely go as tall as possible to allow for head clearance and I would suggest ceiling fans above the boat for those fishing in the rain days. Extra heigth won't hurt your noggin just your wallet.

I wish I would have put Cathedral ceilings in. Ceilings are 9ft, love to have a 4 post lift on one side of the garage

I am not over 6ft. Tall and can not stand in my boat with my 9 ft ceilings. Maybe can in the floor of it but know I can't on decks. Guess it could depend on type of boat. My garage/shop was here when I bought this place. If building a new one,I would have a ceiling high enough for a lift. That would really need to be a minimum of 12.5 ft. If just to store a boat I don't see how standing in your boat could be super important.

I have 10' wide doors and a 12' foot wide door in my shop. If you have room install 12' wide doors. They are so much easier to get a boat in and out of.
I need to be lined up very straight to pull out of 10' wide door with ease.

Same exact thing here. 9' will do it. Just remember that the door hardware is lower.

Just built mine, 10ft ceilings, 3 courses of block and 8ft framed. I opted for two 9x10 doors. I can stand on the decks with no problem and I’m 5’9

I have 8 foot ceilings but I had scissor trusses out in.
Its 11 and a half foot at the center.
My boat is parked at the side and I can stand in the deck and clear my head.

Usabassin - I just reread your edited post - Are you looking at a stick building or is an enclosed carport an option?
