    Pho.......

    ...stuff is addictive. Wife grabbed us some from a local place for lunch. She can buy more than enough to feed the both of us for under $10. They give you a box of chicken and fresh vegetable to add to it. Hard to beat some freshly sliced jalapenos, basil, bean sprouts, green onions and rice noodles in it. Add a bit of siracha and its good eating. I try to steer clear of most rice but make an exception with pho.

    I've got a former vietnamese co-worker who made pho, it is pretty damn good. She used thin sliced steak instead of chicken. Haven't tasted any other that is even close to hers.

    Pho is a staple for me. Then again, I’m Vietnamese! Lol

    I can eat it for breakfast/lunch/dinner 24/7.

    I love to introduce friends to it for the first time. This bit from the sitcom King of Queens hits the nail on the head.

    You’d be better off finding a good place to go eat it instead of making it. Real Pho broth is very complex, takes a long time to make and includes a ton of ingredients to make it authentic. Not a simple dish by any means.

    Lots of jalapenos too.


    Saw a show the other day that proved slurping the noodles up opens up more taste receptors so it tastes better if you slurp.

    I never looked it up to see if it’s true but while overseas I was told slurping indicates you are enjoying a meal.

    The whole trick is the broth. You simmer beef knuckles with spices and don't cut it with water after is't done , 8 to 10 hours. put in refrig and by morning it will be like jello. Use as needed.

    Thats how i learned to make it , two young girls in Vung tau , made a run to Cua Viet a couple weeks later ad they were making with water buffalo knuckles.
