I just started smoking meat this year and am still learning. Has anyone smoked a chuck roast and how did it turn out?

I did a chuck roast on the Kamado smoker over the weekend. I seasoned the roast with garlic salt, pepper let it rest in the frig for a day. The trick is to keep you smoker at 250 degrees. I added carrots, potatoes, onions, celery, a little olive oil in a different pan the last hour and a half. It was awesome, just a little over cooked for my taste. I probably smoked it about 45 minutes too long. This was my first attempt with the new smoker.
virtualweberbullet.com has some good ideas smoking a chuck roast. Try amazingribs.com too. It’s a good starting point.
Yes, it was the first thing I tried on my pellet grill. It was awesome. I did it very much like mentioned above.

I just cook'em in a crock pot with a can of French Onion Soup and a can of Golden Mushroom Soup on top of that.
Cannot be any better.
Well they turned out good for first attempt!
