For stricktly for moving bait applications, am I giving up much going with the Dobyn's Sierra line over the Champion XP series ?

I personally like them both. Champs a bit lighter overall.
Those two lines are pretty close. Sierras are great rods.

Just grabbed a Sierra 7ft mh with micro guides (703) for $103.50 at TW!
Bought a $115 gift card at 10% off, and ordered the rod with it.
I just bought a Spinning 703 Sierra and also own a older 703 Champion and a 703 Champion Extreme. So far the Sierra feels great especially at the price point I bought it at. I didn't get the 25 days of Christmas deal but did get it on sale. Haven't had a chance to fish it a lot but so far so good.
Got a sierra 733 and it is the rod I want to grab everytime. I have a couple Champs (jig rod, 763 spinning) so they are specifics but great. I do not think you are giving much up maybe a little and I mean A LITTLE less weight with the champs.
You should know that in bee tending if you don't shut your trap the bees will get out.
Looking for a good jerkbait rod. How would the Sierra 6’8”M baitcaster perform as a dedicated jerkbait rod?
