Well the issue persists. I noticed the display was flashing between the trim reading and the temp too so not sure if that is related or not.

May be unrelated (possibly something with your trim sender or connections).

Go back to the original advise- clean the compressor strainer, inspect/replace thermostats as needed. Probably going to end up replacing them.

Not saying it's not electrical... just pointing out that it could switch from relying more on the port to relying more on the stb just because the key was cycled off, then on.
Timing is everything, 250PROX 2B121485, New years day went Very slow to warm up, temp reading erratic (85 to 120). Had bring the rpm in gear to get the temps up to 125. Temp would drop very fast at full idle and vary by 20 degrees, took about 10 minutes to get it warm. Put it on pad for about 3 miles, dropped off the pad and got 6, ..
beeps.. beeps.. beeps.. beeps.. beeps.. beeps. No warnings on smartcraft. Water pressure at idle was 3 PSI. Starboard stat had a piece of would in spring area with a portion of it holding the stat open about .030, Timing of this post was perfect for me. Seeing it happen cements it in the hardheads
Thanks Don for the useful info on thermostat strategy
    Thank You Leon Pugh
