Was going to change the oil on my 2007 Stratos trailer, but the aluminum oil plug stripped when trying to get it out of the caliper. The guy I bought the boat from said it has never been changed. Any idea how to get the stripped plug out?

Do you mean the bleeder and the corners rounded off.? A vice grip with heat. or try to hammer the next size smaller socket on it and heat.
It's the pipe plug he is talking about at the 1:27 mark on the video.
It's actually the hub oil plug not the caliper plug. Sorry!

You don't need to do anything with it unless it is leaking.
EZ- Out screw extracter .
drill it in the center of the plug, if possible and insert a reverse easy out to unscrew the plug.
Get one of these in the correct size, 1/4 or 3/8" drive. Set it in the pipe plug and give it a couple wacks with a hammer to loosen the threads, then back it out. Works like a charm. I think those plugs have a drop of blue loctite on them.

Easy out extractor.I had the same problem on both sides. Found replacement plugs at local farm store. Mine are 3/8 by 3/8 long. use Thread sealant when you put them back in it will also help to get them out next time.
