Most recipes I have seen just say to smoke them for about 4 hours.
Anybody use the 3-2-1 method on them?

I started with that method and then modified it to 2-4-30min on my rec tec. If you don't want "fall off the bone" then do 3 instead of 4.
Crock pot has given best results to me.
I don't waste my time smoking country ribs. They're more like thick pork chops with bones on one side. I just cook them on the grill like a steak, and finish them off with a designer sauce and Rendezvous dry rub.
It always comes out great.
Im using 2-2-1 method in my smoker for baby backs. Works great. Havent tried the country ribs yet. Do they need that extra hour?

I wound up smoking them at 225 for 4 hours, no wrap. Took one off to try and it wasn't right. I bumped the temp up to 235 and cooked another hour. At that point they were pretty good.
Next time I try them I might wrap them for a while to see what the difference is.

Country pork ribs are sliced boston butt. They cook different than baby or spare ribs

When my wife was at the grocery store this morning they had country ribs on sale for $1.19 per lb so she got some. I did a 2-2-1 cook at 225d and they turned out great. I will definitely do them this way again.

Wife cooked them in the Instapot, best I have had. And I thought the crockpot was good.
