I thought those ribs smelled a little funny. They were ruined... rancid. Threw them out. Chicken and Pork Tenderloin turned out great though. Chuck roasts are still cooking.

Let us know how the chuck roast was. I can find them on sale pretty often but usually turn them into stew. Never thought about tossing one into the box. I did St Louis ribs today..
Nice. Chuck roasts turn out great on the smoker. Here's a good form that I tend to follow when cooking for a decent crowd. The local grocers around here always seem to have a deal going on chucks.

Now for the chuck roast. It tastes great and is juicy. I don't like slicing it at all. Think I will stick to brisket next time.

Thanks for the update and the recipe link! I'm going to give it a shot next time I see it on sale. Local store is advertising it at $4.50/lb. I see it from time to time @ $2-$3/lb. Looks like excellent taco, burrito, or tamale meat. What was wrong with slicing it? Finding the grain? I've only used chuck for stews and pot roasts. I grind it for soups.

Chuck roast smoked till 205ish...pulled beef. 165 slice it.
