Anyone here make their own sausage etc. I dabble in it about once a year and have noticed that mine always seems to shrink in the casing. I don't hunt so I'm typically just working with Beef / pork or whatever critter my friends give me to process. I have noticed that the stuff my friends get back from a processor is always in an extremely tight case vs mine seems to shrink in the case during the smoke process.

Any ideas on this ??
