For me anything that would A) cause a smell in the house like blacken or pan boiled fish, sauerkraut, brussel sprouts. I don't mine but the wifey insist on those items outside. And B) anything that is fried in oil as it usually makes a mess on the stove.

if the grill is a charcoal grill, use the side burner and charcoal chimney to get the charcoal going.
I've had 2 grills with one of those on it. I think it's one of those things that looks exciting to have at the grill store but never gets turned on. Kind of like having a Cadillac Escalade with the "Off Road Package."
Greens, beans, grits, etc. And it's used regularly here for stir-fry night.
Never hurts to have a side burner, pretty handy if you have a storm outage.
If you ever get bored on movie night, cook up a pan of Jiffy Pop.
We use the side burner for highly odiferous dishes as noted above. We have a outside vented vent hood above stove, but even that doesn’t always work for pan seared fish, Brussels sprouts, etc.
I also use my side burner to start my charcoal chimney when charcoaling.

I have a cast iron pan that I pretty much use just on the side burner.
1. Mushrooms to put on the steaks.
2. Peppers and onions (so I don't stink up the house).
3. Crusty potatoes. Cut up some potatoes, coat with oil, hit them generously with garlic power, paprika and pepper. Cook until well browned. Salt when done.
4. Bacon for the burgers.
Fried potatoes in an iron skillet. Blackened deer tenderloin in iron skillet.
My last two grills had a side burner but both seemed too weak as it took too long to heat a big pot and couldn't blacken anything so I use a turkey cooker. My latest grill has a searing station that works pretty good.
Steam crabs, shrimp,and lobsters. You don’t want that smell in the house. Also, anything that gets fried is done outside.
I like to make my own basting sauce in the kitchen, then bring it out to the grill and leave it on the side burner to keep warm by just turning it on every once in a while and bring it back to a boil. When the BBQ is done, I also use it to simmer the meat in the roasting pot for a while before serving.
Love my side burner for steamers and lobstah! Can’t stand the smell of these items in the house.
