    Seafood gumbo question

    What kind of crab do ya'll use in your seafood gumbo? I have limited seafood options in the Northern Territory. I can get fresh lump crab meat but not sure it will work like blue crab.

    Fresh lump should be blue crab. I use cracked crab, just keep the small ones when I crab and freeze in water.

    I just didn't know if no shell would affect the flavor.

    I've used lump, and claw. Prefer the claw because is stays together better.

    Jeremy...if you can't find all you need for a good seafood gumbo, travel a little south here in Caldwell Parish on a day when the little restaurant here in front of the high school, Fontenot's Cajun Way and get you a bowl of Mrs. Sue's. She doesn't have seafood gumbo all the time. If you do come this way and eat, be sure to ask what she has fixed back in the kitchen that isn't on the menu. Awesome food and even better people. And no...I don't get anything from them. I'm just a very satisfied customer.

    I always wait till last for the crab meat and oysters and I lower my heat to a simmer. It’s always better the next day anyway.
