What tempurature determines an Overheat Situation

Anyone know what temperature establishes/determines an Overheat alarm?

Also, If you were resetting your merc monitor (setting gallons to zero) and left the key on more than 6 seconds then started the engine could this create an overheat alarm?

This is involving a 250 pro xs.

    Thank you for any replies.
