    Breaker replacement

My champion has 40 amp breakers and it looks like the Ultrex recommends 60amp.

This looks like a direct replacement? Would this work?

    As replacent seems ok.

Would it work?......Depends.......How do you plan to disconnect your trolling motor from their batteries when they are charging.

Not sure what your asking. I currently do not disconnect my TM when charging, but I do have a plug at the bow to disconnect the TM if I want to.

Reason is that the mentioned breaker is not a switch and so the boat wiring would best provide some method of preventing your new expensive trolling motor's circuit board from being exposed to the higher voltages and pulsed high frequency outputs of some battery chargers.

As long as your wiring will handle 60 amps. It looks like the breaker can be surface mounted, it might even be a direct fit. The studs have captive nuts you may need to open the terminal lugs on your existing wiring.
