I am replacing the carpet in my boat with hyrdo turd. I really am thinking about not installing the bench seats and just installing two seat pedestals.

If you do go with pedestals, check out smooth moves seat bases. You’ll never feel another wave in your spine again. Best investment I’ve spent on my boat, and I get good use out of them on Georgian Bay.

Were your bench seats mounted on an under seat storage box ? If so I don’t know if I would want to give that up , but that’s just me . I like my under seat storage box .

I would have to build a seat box storage. With two seats and a coin box. The seat box would be huge

I just wonder what the pedestals would mount to.
If you build an under-seat storage box, then the pedestals could be secured very well. If you just wanted to put the pedestals onto the sheet metal flooring, then I'd be worried about the stresses when leaning back, unless you can get under that floor to add some support.
To me that space is screaming STORAGE waiting to happen. I’d build a box and bolt 2 seats to a lifting hatch. You could even make each seat lift on its own, have under seat storage and build a center console/step between them. Just my .02
