Made a new dash from 1/4" formed plexiglass, carbon fiber vinyl wrapped; machined my own gauge trim rings.

Dash plate is a fairly easy project for someone with decent skills with hand or power tools.

Kydex is another easy-to-work-with material - though I've only worked with thinner sheets (knife sheaths, gun holsters), nothing thick.
Lexan and plexiglas are readily available at home centers.
Aluminum sheet is a bit pricier, but again pretty easy to drill, cut, file with normal hand/power tools.
King Starboard is also a great material, available in a variety of colors, but generally need to go slightly thicker than Lexan for larger panels to get similar rigidity.

There are a few board sponsors that can help with hydrodipping (colors, or cool patterns) if you really want to finish your panels off nicely.

my big deal is size, my dash is by no means small ill have to re measure it, its literally flat, no shape and boring. Just trying to spiff up an old girl

steering wheel is being changed, the flasher needs to go bye bye, and i plan to cut the down edge on the centers of the consoles to clear some more leg room.
