    RecTec Pizza Using Grill Grates?

    Has anybody done this yet? I want to attempt it for a family outing, but would appreciate any tips. I have four Grill Grates, so I'm about 18" x 19.25" of surface area. I plan to run them flat side up.

    Flour on the dough?
    Precook/brown the dough like I used to in a pizza oven at a pizza shop?.
    Any advice appreciated.

    We grill pizza on my Weber Genesis. Place doe only on grates for 3-4 min, then remove, and place toppings on the cooked side, then back on until done. Works good.

    Nice! What temps do you cook at? I always liked precooking the dough when I worked in a deli. Customers liked it too, but the boss didn't want us to take that extra step.

    Around 400 to 425.

    Set it to 425 and cooked right on the regular grates. Turned it about 10 mins in. Took about 20 minutes to cook. Delicious.

    I use pizza stones.. , cook at 500.. bottom rack.. . takes about 8-10 mins



    saw one of those pizza show were they cook in a pizza oven at 800 , pizzas done in 3-5 mins..

    We have a pizza vendor that sets up next to our food truck with a portable brick oven that does 12" pizzas in 90 seconds, it's pretty impressive as he can fit 6 in at a time.
