There are different cheeses for different purposes. A good mix of sharp cheddars and Swiss in my omelettes, with Blue cheese thrown in for good measure. For snacks Asiago or any other cheese that smells like toes is good.

Manchego or or Bellavitano Merlot. Both are similar to parmesean but the Bellavitano is soaked and aged in merlot wine. Very good cheese. Smoked gouda makes the cut too. Makes some great burgers or mac n cheese.

Folks that haven't had a really good aged Cheddar (10-15 years) don't know what they are missing.

Hoffman's Super Sharp! My wife's uncle and his buddies get together at our local bar here and have limburger and onion on rye sandwiches, AND beer of course! I've been invited, but haven't been able to get up my nerve. What do they say, "when you get past the smell, you've ..... ?"

No cheese discussion would be complete without the Monty Python Cheese Shop sketch
And now for something completely different.

I'm with you mysuzytoo, We stop at these little main street bars in Wisconsin and my buddy always orders Limburger sandwich with a Beer and another one to bring home. He hates Sauerkraut , so I order a Brat with xtra sauerkraut > we act just like children for the next ten minutes when we are eating our lunch.....
