921 is probably easier to handle overall but the 721 isn't hard to handle once it's setup and balanced.
If the 721 was empty I can definitely see it being a handful.

Either boat empty will walk but I can say the 21 PHX loaded with tackle, a 4 blade prop and a hydraulic jackplate is hard to make walk once setup right and I'm hitting 76mph. After playing around with this rig I am fairly certain the 721 would be similar. Hydraulic plate is really key to getting things dialed in.

I’ve never drove a pheonix, I’m cominf out of a stratos 201 and loaded or not it don’t walk and absolutely rolls, kinda scary thinking I have to load a boat down to get it to drive right, I was planning on downsizing all the junk I have in my boat

It dont walk to me at all . I have a 721 with 250 xs and it drives like its on rails to me . I think most guys struggle because they come out of boats with no lift. The phoenix lifts high out of the water for a 1850 lb boat. I came out of a 100 mph stroker and once you set up and learn the phoenix it is very easy to drive

I came out of a 201 evo and it walked just like my 921 walks. Question is does it walk and you stop it without noticing or can you let go of steering wheel at wot and it not walk?
I like my 921 but will look at the 721 next time. I’d like a little sportier feel like I had with my 201

Well I went with the 721 loaded out with the new fourstroke, 16” graph console and 12” graph bow, felt I’m getting a lot more boat for way less money
