First this isn't my recipe. We made this on the spur of the moment but damn was it good. We used Farfalle pasta but you can use anything and I added procuitto (spelling) for a little protein. First boil pasta to your desired doneness. Take two small rounds of brie, cut the top off and leave the rest of the rind. Place in oven resistant pan, place in 350F oven for 20 min. Cut two big cloves of garlic, 1/2 cup (ish) parsley and I like hot so 1tsp of red pepper flake. Drain pasta, keep about a cup of liquid. Add parsley, garlic, pepper plus about 1TBS of oil to it. Mix. Spoon Brie out of rinds and mix it into pasta. Is too dry, add some of the pasta water to compensate. Serve with grated parma or romano cheese on it.
