2005 stratos 201 pro xl 10" jackplate setup

I am switching from a 6" Slidemaster Manual jackplate to a 10" Slidemaster manual jackplate. I am needing some general idea of prop to pad measurement to start from,

201 pro xl dual console, 250 yamaha vmax 250 OX 66, running 27" Yamaha 3 blade T1 Prop, currently at 5500 rpms. I generally run the boat with med-heavy tackle

First I cannot remember how to measure the prop to pad. I would like to see what it currently is and fell like it will help give an idea of a starting point.

Second, what is the torque pounds for the (4) bolts to transom and also torque pounds for the (4) bolts securing motor to jackplate?

Third, average water pressure at wot and max rpms for an OX 66?

Fourth, was thinking i might switch from a 3 blade Yamaha T1 27" prop to a 4 blade fury, not sure of what pitch size, thinking 25" pitch?
