I am somewhat restoring a 1987 Ranger 370v and would like to replace the dash and the console switches. Has anyone done this before? I’d like to have a cutout done for the dash and put in rocker panel switches.

If it's the main flat dash panel, you can make a new one yourself pretty easy with basic hand tools - easier if you've got a jigsaw, drill press and a dremel tool.
The panel can be made from plexiglass or Lexan (the latter tends to shatter less when drilling and cutting), sheet aluminum, or Starboard type marine plastic. Any of those can be vinyl wrapped or hydrodipped. They can also be painted, although Starboard may be trickier to paint. But you can buy it in a variety of colors, and some textures.

1990 374V Ranger Still kickin' bass after all these years
I use 3/16 Kydex to make dash panels. I have also laminated 3/32 Kydex over the existing panel using 3M spray adhesive. Have also used King Star Board for applications also.Works very well, these are the switches I will be using as replacements on my 91 492v
