    Flank steak

Got a bunch from a cattle farmer. You guys have any good recipes for it? The guy I bought it from said he marinates it while charcoal is heating up and sear each side and swears they love it.

We eat it often. Marinate in italian dressing overnight. Don't over cook, rare to med rare sliced real thin. If any left overs use to make cheese steaks.

Do you grill it? Never thought of the Italian dressing. Sounds good.

I like a dry rub. 3 parts brown sugar, 2 parts pepper, 1 part kosher salt, 1 part paprika. Rub it refrigerate it over night or 8-12 hours and cook on grill.

    Fajitas.

Marinate for 3-4 hours in lime juice, olive oil, brown sugar, salt, black pepper, and thyme.

When you cook it, throw it directly onto the charcoal. Blow the ash off the charcoal first with a hairdryer or similar. Then throw the steak directly on the coals. Flip once. Allow to rest, slice on the bias and make steak fajitas. Grilled onions & peppers, pepper jack cheese, bacon, tobasco, flour tortillas.

Man, I can't wait for summer to get here.....

The recipe Axkiker listed is excellent. I’ve used it many times. Also, Dale’s Seasoning cut 75/25 with water, and a half lime squeezed in. Marinate for 4-6 hours. Makes it tender.
