This is for two medium pieces. Nonstick fry pan, start with medium heat. Dry pieces with paper towel. Salt and pepper lightly. Melt 2 good patties of butter. Put pieces skin side up in pan. Cook 3 minutes or so. Turn down heat a bit and flip. Cook another 2 minutes. Add several healthy squirts of both soy sauce and honey to the pan and start moving the fish around in the pan. Flip back to skin side up and continue swirling the pieces around in the pan for another minute or two. Place on a plate and drizzle the drippings over the fish. Trick is to keep the heat low enough to brown the sauce/fish and not burn it.
