I read that the ‘17 and newer 721 had some changes made to the deck. Are they wider now? Would like to know how it compares to the 819/919 and 920

They're a few inches wider than the previous year 721's. The deck was raised and the gunnels narrowed to achieve the square inches. It is not as wide as the 819/919/920/921.
The spec thead above gives some deck dimensions, albeit the new 721 design numbers are not measured in the same location as the others. You can still get an idea of the size.
Hope this helps. .

They raised the front desk on the newer 721s to make them wider. I looked at all the boats before settling on the 721. It has plenty of width, plus you get more length and boat for your money. It's fast too :)
PM me if you want any more info, or if you want a good dealer to work with. My dealer is down in Southern IL, and I'd be happy to put you in touch with him for some more info as well.

Though the deck has been raised, it only gained about 1" width measuring across front pedestal hole.
That said, it's approx 4 inched less that 920/921, but still a plenty big deck.
I'm not sure if they raised it to make it bigger, or to satisfy those who prefer less gunnel height.
The gunnels nearly go straight up on the sides, so I don't see much room for size gain.
3-4" width difference depending on where you measure and the rod locker lids are longer on the 920. I was leaning 920 until I laid rods on the deck of a 721 & 920 side by side. There was little to no noticeable difference between the 2. I ended up with a 721 because I couldn't justify the $5k price increase for the 920
