    Think I finally got this Prime Rib Thing Down

    One for my Family...medium



    One for my wife's ...medium rare



    I prefer medium rare.

    Cooked in Smoker at 225, until internal reaches (115-120 for med rare. 125 for med). Takes about 3 to 3.5 hours, then reverse sear on each side about 2 mins for a nice crust. This is as good or better than anything you get at the restaurant.

    Btw, at my Costco you can get choice or prime graded meat. For the prime rib, since you are smoking low-slow, I cant notice a difference in taste. I dont think it is worth spending the extra money.

    Grilling, broiling, or pan searing is a different story though.

    Been wanting to try a prime rib on the Hasty Bake. May mess around and try it for New Year's eve. Any tricks that you want to share for seasoning?

    Try searing in a cast iron cornbread pan on top of the grate. No more Armageddon flair ups.

    I think Penzy's Prime Rib Rub is really good (my family favorite)

    Plain old sea salt and fresh cracked black pepper is really good

    McCormick Bourbon Apple Wood Rub is good

    Weber Coffee Rub is good

    Montreal Steak Seasoning is good

    Or Try Mrs. O'Leary's Cow Crust from Amazing Ribs.com

    I put which ever rub on the night before and wrap in plastic wrap and sit in the fridge overnight
