    Making Summer Sausage

    I am thunking about giving this a try. I have a smoker if needed. Anyone have a recipe/instructions or know of a good kit to use? I have deer elk, and bear meat to use.

    I like the jalapeņo Backwoods. I add high temp pepper jack cheese.

    Look at the products made by LEMs or High Mountain. They have basic seasoning mixes you can add to. LEMs has the high melting point cheese if you want to add it as papap posted above. I ate my bear as steaks and roasts... never thought of making any summer sausage. Something to look forward too for next season.

    Little late to the party, but if you haven't made your summer sausage yet, I'll also recommend the jalapeno Backwoods kit.

    With the deer, I mix in 30% ground pork shoulder. That's whole shoulder, not just fat. I also add in some high-melt temperature cheddar. We get it at a butcher shop, but it can be ordered online.
