I am in the process of installing Sandwich Mount Brackets for Duel Minn Kota Talons.
With them in place, it doesn't appear that you will be able to use the ratchets any longer because the brackets for the Talon are blocking them.
Is there a obvious fix for this that I am missing?
I have the jack plate mounts for my talons and the ratchets work fine.

Yes the ratchets still work.
They will still work. Had mine on for years
should still work. I had an issue though on my last boat where the strap rubbed on the edge of the bracket and eventually broke the strap, so I moved the metal bracket for the strap from the motor bolt out to the lower outside talon bracket bolt and that solved the problem.
Mine work just fine with the talons
I also use the sandwich brackets (not the jack plate brackets) on my Z117. My ratchets are squeezed between the bracket and the motor but point down now instead of to the side. Work just fine.
