    Venison sweet breads....

    Or at least that's what we call them around here (inner tenderloins)......sauteed in butter with some sauteed onions on the side......quite possibly the closest thing to heaven you can experience without an out of body experience

    Best thing about them is the only time you get them is when you are the one that's successful. The rest gets shared but not them, unless of course all your buddies help cut him up and they're really good with a few beers in the shop.

    Soaked in Dale's, Wrapped in bacon, cooked in the grill... Only way to eat them down here... You just messing em up puttin em in the skillet... That's what the backstraps for...sliced thin tossed in flour and fried in the iron skillet with some biscuits and gravy.. Now we talking some deer... Y'all can have organs....buzzards get that stuff on my place

    An old Col. I bow hunted with who was a riot. A couple new guys got their first deer and wanted to know where the "Gland" was that made the meat bad........Col. went in cut the loins out told them that was the Gland and asked if he could make scent from them, and off he went... he called deer " Beadie eye bastards" was one hell of shot too.

    Man.....different sayings mean different things all over I guess. I have always heard the inner loins referred to as sweet breads around here. Either way....whatever you call em or however you cook them, they are delicious. Only way to screw them up is put seasoning on them

    Inner loins are the tenderloins, backstrap are the loins. Sweetbreads are guts. At least around here, and everywhere else I’ve ever hunted.

    A guy at my deer camp will take the first buck killed for the season and cook the heart. Actually loved it until he confessed and told us what it was. But I think he could cook a dirty dish rag and if you didn't know what it was you would say it was delicious! We just call the strips inside the bottom of the backbone the tenderlion. Outside the back bone and done the back,we call back straps.

    Smart feller.

    When I was a po' azz college student (instead of a po' azz college grad), I worked check stations for class credits, taking bio samples (rumen, abo- and such ) from harvested deer in the Ozark Nat'l Forest in NW AR.

    I got pretty good at spotting folks that might fall for the old, "Hey, I'll get those poison glands out out of there for you while I'm getting my samples if you'd like."

    ...Didn't work all the time, or even most of the time, but it worked often enough that I looked forward to working check stations and enjoying some fresh inner tenders with my mac & cheese each Fall.

    That’s pretty much here too. Sweet bread is organ stuff, but yep....pretty much the same. I don’t eat sweet bread. Love the loins though! Now the hearts of some animals are really good.
