    Backstrap Pieces

Egged up some Bambi meat. Grilled a potato, made some pinto beans and coleslaw. I am an animal lover. Right next to the sides.

Simple marinade. Soy sauce, squirt of lemon juice, minced garlic, tsp of olive oil. Into the fridge for a couple hours. Cracked black pepper on top, then on to the grill. Indirect at 325 until 135. Hickory chips, water tray.

My greatest fear is turning great pieces of meat into dry cardboard. This one was wonderful. Lean game meat goes from good to dry in a heartbeat. I'm not a hunting man but I appreciate the meat I get from friends. Can't afford to fk them upp
