change your 10" to a 12" Hdro JP. Helps with take off as well as can stay on plane at lower speeds will also see a increase in speed but with those 10' PP not sure as I only have 8'

I was told that if I went to a 12inch I might or might not gain top speed but for sure I would loose hole shot setting back to 12. Do you think this is true???
Outboard will either be a SHO or a Honda most likely ordering it with no Outboard and having it rigged with a Honda at a local Honda dealer.

Sounds like you know what you want! Congrats. My brother has a 2017 721 and I have a 16 921. I see a little difference in width and length of deck, but not much. I really enjoyed driving his boat. What a rocket ship.
If you're going with the Honda I'd get a 10". I'm not sure I've seen anyone with an sho with a 12". Supposedly the sho has 2" or so setback built in already. If you were getting a proxs I'd recommend the 12" all day.

Yes they are the same outboard (250 Pro XS). On a normal day with 2 guys I can get between 72-74 in my 921. I drove his boat and reached 74.6 and had more to go, but ran out of lake. I think I could have hit 76-77. His jack plate gauge was acting up that day too, so I wasn't really able to get a good grasp on where the jack plate was.
Any plans to get a set of lithium batteries???
Then I'd say the 12" is the way to go.

Extra bilge pump is a good idea...721s only come standard with one. I'd also do C-Channel and paint over gatorhyde, trailer shocks and dual axle brakes. Just a few things I added to mine that I feel are worthwhile.
