If I idle for more than 3 mins or so I get a beep and it gives a temp gauge fault.
but the gauge and temp seem to be working and indicating normal.

Yes. Remove BOTH thermostats, and check for debris holding them open.
Can I do that without messing with the fuel rails? Haven't even looked for them yet.
