Well inside this bacon weave wrapped bad boy is a pound of Jimmy Breakfast Sausage rolled out flat. Before rolling up it was sprinkled lightly with my favorite rub. It also holds 1/2 cup shredded pepper jack cheese. 1/2 cup cup cheddar cheese. one jalapeno pepper diced very small and about a dozen baby spinach leaves. Going on the smoker at 240 degrees for about three hours under a heavy hickory smoke. When internal hits 160 degrees I'm gonna call it supper.
Was very happy with the result. Took near on to 5 hours for internal to hit 160. I was thinking more like 3-3.5 hours. I may try something similar but using hamburg instead of the sausage. Will also drop the jalapeno pepper as it has too much bite for the wife.
