Looking at a new 21' boat.
Only concern is carpet is the darkest I've ever seen.
Is that a problem for hot sunny days?
Everything I would touch or contact is lighter so carpet is the only issue.

only an issue if you fish barefoot.
Would also show fish poop in a big way, but this is only a problem if you like clean carpet (and catch fish).

Mine is dark gray and does get hot. OTOH, I'd never be around treble hooks on the deck without shoes.
When I put new carpet on my old boat (70's yellow color boat) I went hunter green because I thought it would match the best. I will never do that again. Not only is it hot to the touch but it is like standing in an asphalt parking lot on a hot day, you could feel the heat radiating up from the carpet.
I'm not a fan of dark carpet and dark seats. My boat has charcoal colored seats and they will set your a$$ on fire. I put my life jacket over it to shade it.
I like a darker grey cause as it fades it gets lighter....

My latest boat I went with a light shade of grey on the carpet and off white seats. BIG difference from my last boat with dark carpet and dark grey seats which I used to have to use a towel to sit down on in the sun.
Meh. Mine is dark. The latches on the deck lids and the vinyl on the seats get significantly hotter than the carpet. I was reminded of this on Saturday after pulling the boat out of the water as the thermometer tickled 94 degrees. (On an unrelated note: move to Minnesota, they said. The summers are great, they said! )

Years ago I had a Stratos that was black with black carpet
I swore never again!
The carpet would get so hot you couldn't go barefoot, and you could feel the heat radiating off the carpet onto your ankles and lower legs
I am in the Tennessee heat and took the boat to Florida at times

I had a canary yellow Bullet with black carpet for 7 years and never noticed it being hot. The black carpet really set it off... Only problem was it showed the dirt. I vacuumed it every time I used it to keep it looking clean... I get black carpet again... Dan
My glass Ranger has black carpet. I don't notice the heat but then again I'm not dealing with the same temps as you in the south and I always wear shoes.

I dont find my black carpet hot at all but I live near boatbuggy and rarely see 90*+. My hull is white to so very cool
My boat came with light grey and have had other boats in the same color. I recarpeted a couple boats with darker colors and like the darker look, but it does get real hot and some of the real dark colors show dirt and stuff bad. Like crank68 said, the darker will fade and get lighter. Which gives your carpet a longer color advantage.

Had a Ranger with hunter green carpet. Gets hot and shows every little booger. Not as hot as kneeling on one of those Perko latches, but hot. Wouldn't let that deter me from a good deal on a boat I liked though.

I fished today in a dark boat with black stripes on the seat and I had to put a towel in the seat in order to sit down. Feels good in the winter though.

I got the mid-grey carpet and on a sunny/hot day kneeling on a knee is a no go. Still I prefer mid-grey over tan or dark grey. The tan and greens show my coffee spills and fish blood. Dark grey/black too much for either Kentucky or Florida where I fish.
