I am hitting 5000 rpm and then she breaks over. It still takes a little bit of time to do so. My thoughts was that a prop with less pitch would go up with RPM??

Ideally 3500-4000. Does your xs have eight holes and how many are plugged?
how many vents are open. sounds like you need to plug a few

This is not apples to apples however with my prior lower unit (coned 1.71) I turned my Croxton 28BravoI 4700 on the holeshot and it never blew out. Just pull like an ox. It would plane off with a load in about 5-6 sec. With the M2 1.86 gear I have now the Bravo had to be feathered back a bit and I know it exceed 6000 WOT. I recently sold the Bravo after a polish job from Mark. I've been running an older 27TXP and 26 Raker II for fishing but I want a 28 ProMax. or 28 Razor 4, really miss my Bravo holeshot.
7 are open
I would take away some venting

Depends on the motor as well. 4 strokes require less venting as they have more low end torque and hp. 2 strokes I like
to see 3800-4000.

Start adding plugs, start by adding at least 2.
