    My Drug of Choice

is Pimento Cheese. I make, and eat 20 ounces a week, on chips, crackers, bread, toast, hamburgers, pork chops, you get the idea. I once used recipes, but now I just make something up as I go. The basic recipe includes sharp cheddar, Helmans or Dukes, cayenne, black pepper, and pimentos or some other roasted pepper. Sometimes I add minced onion, garlic, paprika, smoked paprika, or Worcestershire. Sometimes Philadelphia Cream Cheese or blue cheese is added and occasionally some beer. I've been doing it so long making it up as I go, I've lost my old tried and true recipes. Does anyone have any they would like to share?

I like to eat pimento cheese sandwiches for lunch every now and then. A little jalapeno mixed in gives it a nice little kick. The best store bought spread that I have found so far is Palmetto Cheese spread. It is made in the lowcountry of South Carolina.

I'm growing a couple pimento pepper plants this year, already have some forming. I'll be checking back in on this thread.

It's a good recipe. I made it last night and put it on a burger for lunch.
