    smoked potatoe salad

    I smoked 6 russetts stuck them with a fork, rubbed em with olive oil and salted them and put in my smoker for about 45 min at 275 or when fork tender. I pulled them out let them cool down in then in fridge next day cut into cubes and fold in mayo, scallions, salt and pepper, and yum tastes like bacon infused or something but wife and her mom go crazy over this simple recipe. Also, smoked italian sausage comes out great on smoker.

    Step it up and go with yukon golds. The only way we do potatoes anymore. EVO, seasoning, then smoke. Pull off when I.T. is 200°. When done you can also throw in foil with a good chunk of butter then seal it up and let set. When dinner is ready open up and dump all the yummy on the plate.
