Use the owners manual. Available to you at www.yamahaoutboards.com

Also, retorque the nut after the first hours use. Not specified in the OM but good practice. Inspect the propeller from time to time during use. Catch a loose prop nut early and no harm no foul. Catch it too late and you may be buying a new propeller and gear case.

Don't you just torque it to the point where you can get the cotter pin hole lined up?

It is normally torqued to the value specified in the owner's manual/service manual. Then tightened further as needed to get a cotter pin hole lined up.

Torquing the nut further to get a cotter pin to line up is the normal procedure. Never loosen it to get the pin lined up.....learned that the hard way haha.
