    Something Different for Supper

    Eggplant Parmigiana. Gonna be tasty and it sometimes better the next day for leftovers.

    Ummmm love some eggplant, always had it dredged in flour and fried, Parmigiana sounds real good.

    Please eat my part. That is one food I don't really care for. Tried eggplant once and it was BITTER and I didn't like it. Maybe it was too old, or some other problem.

    How do you make eggplant not bitter?
    Steps
    Slice or dice the eggplant as required for your recipe.
    Sprinkle salt over the slices or diced pieces.
    Leave to sit for half an hour with the salt on the flesh.
    Remove the salt by washing it off once you are ready to cook with the eggplant after the half hour is up.

    Also try sliced in slices, spreading some mayo on it, coat it with seasoned bread crumbs and then bake it in the oven. May sound a little strange but that's the way my wife hooks it up and it's delicious.

    I love that stuff! The best way to make it is to remove the eggplant. Throw the eggplant in the garbage, and replace it with veal or chicken. yum yum.
