Wow! That looks great Matt! I may have to try to reverse that same build. Go from dual to single. I think it can be done?

Well here is an update with the new 115 and a Laser II 21 prop. DISMAL! It's a dog out of the hole. I've played with the jack plate height. No better. Played with the plugs on the prop, no better. Takes 30 to 40 yards to get on plane, sometimes I've had to have my son go to the front deck to push the nose over. I'm taking it back to the dealer today to check it out. I have no bottom end torque. I know and others have told me this setup should jump on pad and do about 50 gps. I'm very discouraged about this right now. More to come.
Does the laser have pvs plugs?
I played with all sizes. I even removed them and it just blew out. Runs the best(haha) with 3 large hole pvs. I took it to the shop and they put it on the dyno. It ran up great. I'm back to the prop. Looks like I need to step down to a 20 or 19 pitch.
Call Croxton he can put some hole shot in to the prop.
How would I get hold of Croxton?

I would go with the 19p no doubt on your rig. If it happens to bump the upper limit, you can back off a tad or fill up a live well.

Great looking boat Stompy!
Well not yet. I have a 17" SS, (forget the name). She comes out of the hole much better (GPS 45) alone @ 5800 RPM, but I still think it can do better. Still hoping to get the 19". I did 53 GPS with the 21", (once it got on pad and all the way down on the jack plate). I think I'm getting closer.
Ok...finally. Update. I now have a prop that works great and I'm pushing 47 GPS, full load and 2 people. I tried a 18 pitch that was ok but not great. I found a moderate rake, cupped 19P (don't know the brand) and it's great. I jump on pad, even with live wells full. I'm playing with the jack plate but until I get a water pressure gauge put in I'm staying at the height I'm at. But I think I can come up another click.
