The best dang collard greens I have ever had!

I found this recipe in the Lodge cast iron cooking cook-book. It was for how to cook collards in their dutch oven on the stove. This recipe yields the absolute best greens I have ever had in my life. Personally, I leave out the garlic but that's just because I'm not a fan. My momma uses the garlic because she is! Also, I cook mine longer than the stated hour - maybe closer to two hours but it just depends on how tough your greens are when you start.

Recipe works equally well for turnip greens, collards, kale, etc. Enjoy!

That is some fine eating right there. Every year In November I will put enough collards in the freezer to last all year. Some people make them just around the holidays during that time of year but I like them all year long. Nothing better then a plate of collards with a bowl of black eyed peas and cornbread.

Hmmmmmmmmmmmm...I've never heard of or seen white balsamic vinegar and I don't know how it cooks down so I guess I'm gonna say "the dark stuff." lol

    Yes, I'm serious!

My pleasure, BL! I just made a big ol
pot last weekend too. Would go perfect with some Brunswick stew from Williamson bros bbq in Canton! Or some bbq from Fergusons meat market up on 369. Mmmmmmmmmm!!!

Can ya tell I'm from your neck o' the woods? :)

I may have to take a stab at these! I feel like an important to step to collards is they must be prepared below the Mason Dixson, did I miss this in the recipe or do you think they will taste alright up here?
