Living close to the Chesapeake Bay, Rockfish (stripers) are a lot of fun to catch on Bass tackle !!
Never done the big salt water fishing thing, but in near shore trips, I really enjoyed catching Bluefish followed by stripers.

Favorite saltwater would be surf fishing for Stripers, Blues and Reds. Haven't been surf fishing in years, tho.

A nice by catch, at least in the waters I fish, are juvi tarpon up to usually around 40 pounds.
Also catch a few largemouth in the same waters on the same lures.
Snook, while standing in knee deep water....1/4oz. jig head with a GULP! new penny shrimp. Jacks and Snapper are pretty fun as well, usually with live shrimp or greenbacks. I love the occasional Stingray but they usually get off before I can get them in! I've caught a few Mackerel on Gotcha plugs, they fight pretty decent.
