Prolly 3/4" below with a 27-28 Bravo to fish would be a good start. I'm sure a XRS expert will be along to give a more complete answer.

Do they have rehab for this addiction, cause I need to go!!!!!!!!!!!
What LU you guys recommend ?
You need a prop with cup in it to get the nose up. The XRS is nose heavy to start with due to console being moved forward and the new gearcase seems to have a lot of stern lift in them so combined if you don't go with a prop that has cup in it the XRS will not run right and run nose down! I set my XRS's up at 3/4" below pad and run a 27TXP with the vent holes filled, this should put you right in the 80-81mph range with a load. They are a tad slower than the XRD's, but there is no comparison in ride and fishability. In my opinion the XRS is the best riding Bullet ever built, but you do have to give up a little speed to get the ride! The bravo's don't have enough cup from the box to get the nose up like you need it to be, I haven't played with a worked bravo on one yet cause I can't seem to keep my demo's long enough.LOL

How much set back
mine has 14" jackplate. Chris is right on the money. I run a 28p Bravo FS with quite a bit of tip cup in it. Some of the other local XRS owners are running TXP's with good results. Seems that 3/4" below on prop is the sweet spot with a load.
