I have a 1987 Cajun Paul Elias. I think that’s what is called. Anyway, it has a jack plate on it and for some reason the rear of the boat sets very low in the water. Any suggestions???

DJ is right...it's normal. Takes a little getting used to...particularly when a tsunami comes over your transom when you power down. All in all the boat will fare well in rough water even with the low transom.
Yep. I had an 87 PE. The reason it sits so low is all the weight is in the back. Two 18 gal tanks and three batteries (at least) are a lot of weight. Most boats put the gas tanks more toward the center. Also makes it somewhat slow out of the hole, (hydrofoil helps a lot) and makes a quick shutdown a very wet event. Learn to slow down gradually, while trimming the engine "in/down" if possible, and "goose" the engine just a tad as the wake catches up to you.
And get used to having people tell you "Your boat is sinking," "You forgot to put the plug in," etc. Just smile and say "thank you" and go on about your business.
Both these were taken at the end of the day when I'd burned off a lot of gas too.
