If everything seems to be working fine, all I would do each year is:
1. Change the lower unit oil. Pay attention to the color of the lube that comes out. If it's milky-looking, water is getting into your lower unit..probably a seal that needs to be replaced. Get this looked at right away. Dark color is good, in most cases.
2. Check the plugs to see if they look dirty. If they do, I would de-carb the engine and then change spark plugs afterwards. If you don't know what 'decarb' means, doing a search on these board should give you plenty of info on the topic. If the plugs look clean, I wouldn't change them, but you still could.
3. Check any/all connections you can get your fingers on - electrical connections, battery terminals, bolts/nuts on jackplate, etc. Make sure they are secure.
4. It's probably a good idea to repack the bearings on your trailer each year, too. Cheap insurance.
I'm sure others will have plenty more ideas for you, but that's my basic list.
if you run it alot, replace impeller also.

If you bought the exted warranty or intend to purchase it, most policies (warraties) require that the dealer check out the motor once a year. I pay about $150 per year for my dealer to change the lower unit oil, and check out the motor. This satisfies the warranty requirments and provides some peace of mind for a reasonable price in my opinion.
BTW nice boat, I had a Champion 196 before going to the dark side and running a jet drive.
