Just make sure it is a lighter shade of color. When the weather sucks and you are in the man cave nothing pays off like enough light.
Osb.drive a nail or screw, remove it and the hole is gone. Plus it will hold all the weight you want

Did my garage with this. Nice and bright, you can wash it and zero maintenance
If you do metal on a he walls or roof, you need a vapor barrier or you will end up with mold inside the walls or attic
I have OSB. Very versatile.
Just something else to throw out. Have you thought about a trayed ceiling in your third stall and installing a four post hoist? This will give you an “extra” stall.
I have seen the Trusscore PVC paneling material on the intermess and may have a use for it.
Do you have personal experience with it?

Make sure your fans will move sufficient air to help keep things dry. I insulated everything, walls, ceiling, garage doors. Keeps my propane bill down.
I’m getting ready to do ours. OSB is what I’m going with.
Kind of off topic but my next new build I will have a floor drain where the boat is being parked. Also a utility sink is a must.
No way I'd pick ugly osb over drywall.
Check out I-span. PVC vertical panels. 16" wide and basically installs like vinyl siding.
Here’s a couple pics of the metal and barn wood wall I did in mine.
