Do you put Rub on the bottom side of your Ribs?

Just wondering if you put rub on the bottom side of your ribs when smoking them?

I coat my ribs, all around, with yellow mustard, and then cover the ribs with rub all around.

I just think the extra crust on the bottom side adds flavor.

I cover both sides. Don't like mustard so I use olive oil as a binder.

I apply rub on one side then I let it sit about 15 minutes or so before turning it over and applying rub on the other side. I think that may help the rub to stick better.

Never need a binder---Put rub on--wait until it looks wet---Proceed to other side...No binder needed.

I cover the entire rib, sometimes I use mustard or not. But in any case, it’s a good binder and leaves no flavor behind so it’s a fine choice. But to answer your question yes cover the entire rib.

Over the whole rib. If you do not peel the membrane it may not matter but I peel and rub.

I used mustard when I first started smoking meat but have not used any in 20 years.

I always peel the membrane. Just a little rub on the bottom. Most on top. I’ve used mustard, maple syrup, molasses, and other stuff as the glue. Never made a difference in the flavor. Now I don’t use any.

Yes. Peel the membrane, add mustard for binder, and put rub on both sides is how I do it.

Guess I'm the odd one out. I only do one side and I do not flip them. Light rub no binder, spritz with apple juice every 30 minutes or so, meat side up for the entire cook.

Same here, peel the membrane off then mustard binder and then sprinkle rub all over. Then I let them set for a few until the rub is nice and set before going on the smoker.

if you want to smoke some fantastic ribs try this. Before you smoke your ribs, prepare them as you usually would and then cut them into individual pieces- just like you would after you’ve cooked them- They absorb so much more smoke and cook so much more even and they are absolutely delicious. I can almost promise you once you do this, it’s the only way you’ll ever cook them again. Try it……

Have to put rub on both sides, if not you’ll have one sided tasting ribs.

I use mustard binder as well, just habit
