Prop for gambler with performance motor

I have a 28p chopper on a 20 foot gambler. The motor is a racing merc 2.4 specked out to 2.5, turns 9k+ rpm. For short runs and 6500 all day. With the 28p it will hit 9k in 100 yards. How much of a prop could I run, the 28 has ok hole shot but not sure of a 31 would be to much of jump? Any advice??
